Black Bean Hummus, Cilantro, Carrot, and and Red Pepper Roll-Ups

Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 c. canned black beans, rinsed and drained
  • 1 clove garlic
  • 2 tbsp water
  • 1 tbsp extra virgin olive oil
  • 2 t. tahini
  • 2 t. lime juice
  • 1 t. grated fresh lime peeel
  • 1/4 t. hot-pepper sauce
  • 1/4 t. salt
  • 3 multigrain wraps
  • 2 carrots, grated, about 1 cup
  • 1 c. thinly sliced cucumber
  • 1/2 c. jarred sliced roasted red pepper
  • 3 tbsp chopped fresh cilantro

Preparation

Step 1

In the bowl of a food processor, combine the chickpeas, black beans, garlic, wtaer, oil, tahini, lime juice, lime peel, hot-pepper sauce, and salt; puree.
Arrange the wraps on a work surface and spread each with one-third of the hummus mixture, 1/3 c. of the carrots, 1/3 c. of the cucumber, one-third of the roasted pepeprs, and 1 tbsp of the cilantro. Roll up jelly roll-style and cut each into 8 cross sections. Arrange on a plate and serve.
