Ingredients
- 1 1/2 # boneless chicken breasts sliced
- 1 tbs soy sauce
- 3 tbs oil
- 1 small red onion thinly sliced
- 1 small red pepper thinly sliced
- 1/2 # grn beans halved
- 1 small potato chopped
- 2 tbs fresh ginger
- 1 tbs lemongrass
- 11/2 tsp each coriander and cumin
- 1/2 tsp red pepper flakes
- 1 can coconut milk
- 3 tbs fish sauce
- 1 tbs sugar
- 1 c firmly packed basi; chopped

Preparation
Step 1
In bowl toss chicken with soy sauce and let stand 5 min.
In lage skillet heat 1 tbs oil over high heat. Cook chicken until opaque. Remove chicken from pan.
Add more oil reduce heat to med high and cook onion 2 min. Stir in peppers and grn beans-reduce heat to med-low cover and cook 4 min. Add oil increase heat to med and add ginger, lemongrass, coriander, cumin and red pepper flakes. Cook for 1 min. Add coconut milk, fish sauce and sugar. Simmer 1 min. Stir in chicken and veggies, simmer 3 min. Remove from heat and add in basil.
Serve over rice
