    # boneless chicken breasts sliced

    tbs soy sauce

  • 3

    tbs oil

    small red onion thinly sliced

  • 1

    small red pepper thinly sliced

  • 1/2

    # grn beans halved

  • 1

    small potato chopped

  • 2

    tbs fresh ginger

  • 1

    tbs lemongrass

  • 11/2

    tsp each coriander and cumin

  • 1/2

    tsp red pepper flakes

  • 1

    can coconut milk

  • 3

    tbs fish sauce

  • 1

    tbs sugar

  • 1

    c firmly packed basi; chopped

Directions

In bowl toss chicken with soy sauce and let stand 5 min. In lage skillet heat 1 tbs oil over high heat. Cook chicken until opaque. Remove chicken from pan. Add more oil reduce heat to med high and cook onion 2 min. Stir in peppers and grn beans-reduce heat to med-low cover and cook 4 min. Add oil increase heat to med and add ginger, lemongrass, coriander, cumin and red pepper flakes. Cook for 1 min. Add coconut milk, fish sauce and sugar. Simmer 1 min. Stir in chicken and veggies, simmer 3 min. Remove from heat and add in basil. Serve over rice
