Ingredients
- Serves 4
- 2 cups cooked quinoa
- 2 cups blackberries
- 1/2 cup crumbled feta
- 1/2 cup shelled pistachios
- 2 Tbsp. cider vinegar
- 1 Tbsp. maple syrup
- 2 Tbsp. Dijon mustard
- 1/4 cup olive oil
- 1/4 tsp. cinnamon
Preparation
Step 1
Combine the qunioa, blackberries, feta and pistachios in a large salad bowl.
Whisk together the cider vinegar, maple syrup, Dijon and cinnamon. Slowly drizzle in the olive oil, while continuously whisking the dressing.
Drizzle it over the quinoa and toss to combine.
Serve on a bed of baby spinach, if desired.
