Ingredients

  • 3 egg whites, well beaten
  • 1/3 cup confectioners' sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder

Preparation

Step 1

Preheat oven to 350 degrees.

Place egg whites in large bowl and beat until stiff; gradually add in sugar. In small bowl, beat egg yolks until lemon colored, then add to egg-white mixture and continue beating. Add vanilla extract; beat again.

In another bowl, combine flour with baking powder, then fold into egg mixture.

Cover cookie sheet(s) with waxed paper. Spoon mixture onto waxed paper, forming 3-inch-long finger-shaped cookies, and bake 8 to 10 minutes or until light golden. Cool slightly, then remove from pan with spatula.

Notes:
Sprinkle with confectioners' sugar or serve with fresh strawberries and whipped topping and you've got an easy, old-fashioned dessert.
