Sweet Cinnamon Quick Bread

Ingredients

  • BREAD -
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 1/4 teaspoons salt
  • 1 cup buttermilk
  • 1/3 cup corn oil (or vegetable oil)
  • 2 teaspoons vanilla
  • 2 eggs
  • STREUSEL -
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons COLD butter or margerine

Preparation

Step 1

Preheat oven to 350 degrees F. Grease and flour the bottom only of a 9x5-inch loaf pan. In a large bowl, combine all bread ingredients; beat with an electric mixer 3 minutes at medium speed. Pour batter into prepared pan. In a small bowl, combine all topping ingredients until crumbly. Sprinkle over bread batter and swirl with a knife to marble. Bake at 350 F for 45-55 minutes or until a toothpick inserted in the center comes out clean. Remove from pan immediately and cool completely before slicing. Wrap and refrigerate leftover bread. Makes 1 loaf.

Buttermilk may be substituted with 1 tablespoon lemon juice or vinegar and enough milk to make 1 cup.
