Meatloaf on the Stovetop

MY NOTES: This was really moist and good. I divided the meatloaf into two smaller meatloaves so it would cook thoroughly. When the meatloaf was done, I thickened the broth into gravy with cornstarch. Would be great with mashed potatoes too!

Ingredients

  • 1 1/2 lb ground beef
  • 2 eggs
  • 3/4 cup bread crumbs
  • 1 Tbsp dried onions

Step 1

I make my meatloaf on top of the stove - which some people think is weird. I didn't have a working stove at the time. I take my ground beef - add dried onions - eggs and bread crumbs. Put a little oil in the frying pan that has a tight fitting lid - brown lightly - flip over and add carrots and potatoes, one cup of beef broth ( I use bouillon) and then cover and let it simmer for 45 minutes to an hour.

Great recipe - when times are lean there are more potatoes than meat
but nobody in my household ever complained.
