Guinness Marinated London Broil

Ingredients

  • 2.5 pounds London broil
  • 2 bottles Guinness
  • 3 cloves garlic, crushed
  • 2 springs rosemary
  • 1 T olive oil
  • 1 t ground pepper
  • 2 t salt
  • 1 t oil

Preparation

Step 1

Combine Guinness, garlic, rosemary, oil, and pepper in a large bowl or resealable bag. Let marindat for at least 6 hours. When ready, remove and put marinade in a small saucepan, turning heat on med-low (do not boil). Heat grill skiller or cast iron pan. Preheat oven to 325. Sprinkle 1 teaspoon salt each side of meat. Put 1 tablespoon oil in pan. Sear meat in hot pan, making grill marks. Spoon a little of the marinade over meat and put into oven for 10 minutes, or to desired temp. Remove when done, let rest for 10 minutes, then slice on slant against the grain.
