Ingredients
- 1 tbs oil
- 6 1/2 cup scoops of mashed potatoes
- 12 oz sausage links
- 5 oz baby spinach
- 12 large eggs
- 1/3 c flour
- 1 tsp baking powder
- 3/4 tsp salt
- 2 tsp thyme
- 1/4 c chopped green onions
- 1 c cheddar cheese.

Preparation
Step 1
Oil 13x9 pan Drop 6 1/2 c scoops of mashed potatoes into dish, 2 in apart.Brown sausages and scatter in dish add spinach to pan and wilt for 1 min.
Whisk eggs with flour, baking powder, salt, thyme, and green onions. Pour over sausage and potatoes. Sprinkle with cheese.
Bale @375 for 20-25 min.
