Potato Leek Cakes

Ingredients

  • 1 pound Yukon Gold potatoes
  • 1/2 teaspoon salt
  • pinch of pepper
  • 1 egg lightly beaten
  • 1/4 cup leeks, finely chopped, sauteed in butter
  • 2 tablespoons butter

Preparation

Step 1

Bring water to a boil in a large saucepan. Add potatoes and boil for 15 minutes. Remove from heat and allow to rest for 10 minutes.
Drain potatoes until slowly running cool water for 10 minutes. Refrigerate for 30 minutes.
Peel cooled potaotes and shred into large bowl. Season with salt and pepper. Add beaten egg and leeks, stir gently. Shape into 4 patties.
Heat butter in skillet and saute patties over medium heat until golden, approximately 3-4 minutes on each side.
