  • 3/4 lb fresh green beans
  • 1/2 cup chopped onion
  • 2 cloves garlic
  • 2 slices prosciutto
  • 3 large plum tomatoes
  • 1/3 cup basil leaves
  • 2 tbsp olive oil
  • 1/3 cup red wine
  • 1 tbsp small capers
  • 1 tbsp Italian bread crumbs
  • 1 tbsp Parmesan cheese

Step 1

1. Rinse, drain and trim green beans. Finely chop onion, garlic, prosciutto, tomatoes and basil. Set aside in separate small dishes.
2. In large skillet over medium high heat oil. Add onions and garlic and cook until fragrant, 2 mins. Add prosciutto and cook, 2 mins.
3. Stir in green beans. Cook, stirring frequently, until beans are crisp tender, about 10 mins.
4. Pour wine into skillet mixture. Add tomatoes and capers; reduce heat to medium, and cook, stirring until heated through, 2 mins. Add basil and stir to combine.
5. Transfer beans to serving dish. Sprinkle with bread crumbs and parmesan and serve.
