Mom's- Potato Salad

Ingredients

  • 4 cups cubed cooked potatoes
  • 1/4 cup clear French dressing (or 1/4 cup vegetable oil or canola oil and 2 tablespoons of vinegar)
  • 3 hard cooked eggs, cut up
  • 1 cup diced celery
  • 2 to 3 tablespoons chopped onion
  • 1/2 cup salad dressing or mayonnaise

Preparation

Step 1

Cook potatoes in skins.
Cut up potatoes while warm. Marinate potatoes in the dressing mixture (french or the oil),for 1 hour. Add remaining ingredients. Season with salt and pepper. Garnish with 1 hard boiled egg, parsley and pimientos.
