Rhubarb-B-Q sauce

Ingredients

  • 2 1/2 cups Apple Juice
  • 3 cups Red Rhubarb Stalks, chopped into 1/4 inch pieces
  • 1 med Onion, minced
  • 1/2 cup Maple Syrup
  • 4 T. Dijon Mustard
  • 2 T. salted Butter
  • 4 T. Worcestershire Sauce
  • 2 T. Red Wine Vinegar
  • 4 T. Soy Sauce
  • 1 tsp. Chipotle Chile Powder
  • 1 tsp. Mesquite Liquid Smoke
  • 1/4 cup Dark Brown Sugar
  • 1/2 T. Tabasco
  • 1 tsp. Black Pepper
  • 1 tsp. Garlic Powder

Preparation

Step 1

Simmer Apple Juice and Rhubarb until rhubarb softens (mashable, ~10 minutes)

Add onion, simmer to soften.
Stick-blend mixture until smooth (consistency of Apple Sauce)

Add remaining ingredients and reduce lightly.
