Avocado Taco Boats

Ingredients

  • 1 lb. Lean Ground Beef (or ground turkey or chicken)
  • 2 Large Avocados
  • 4 Grape Tomatoes
  • 4 Jalapeno Rings
  • 1/4 Cup of Sour Cream
  • 1/4 Cup of Salsa
  • 3/4 Cup Sharp Cheddar Cheese - Shredded
  • 3 Large Romaine Leaves - Shredded
  • To season the meat I used Cumin, Chili Powder, Onion Salt, Garlic Powder, Celery Salt, and Pepper. You can use a taco seasoning packet but it ups the carb count quite a bit)

Preparation

Step 1

Cook the ground beef with all of your seasonings over medium-high heat until the meat is cooked all the way - Drain excess grease from the pan


Cut the avocados in half and use a spoon to scoop out the avocado. If you slide a large spoon a long the edges, you should be able to get it out in one piece


In the empty avocado shells, add 1/4 of the shredded lettuce into the bottom of each shell


Next, add 1/4 of the ground beef into each shell
Top each one with cheese, salsa, sour cream, tomato, jalapeno and avocado.


SERVE AND ENJOY!!!


****There will be a lot of left over avocado if you only put one piece on each boat. I sliced up the rest of the avocado, sprinkled some salt on it and served it along side the taco boats. When I make these the next time, I will probably only scoop out half of the avocado, omit the lettuce and just pile the meat right on top of the avocado. I will probably also use ground turkey. I love the texture of ground turkey meat for tacos****
