Ingredients

  • 3 tbs plus 1 tsp butter
  • 1/2 cup chopped onion
  • 1 garlic clove, minced
  • 29 oz sweet potatoes, drained
  • 1/3 cup sour cream
  • 1/2 cup loosely packed fresh parsley
  • 3/4 cup dry panko breadcrumbs
  • 1/4 cup grated Parmesan cheese

Step 1

1. Heat oven to 350 degrees Using 1 tsp of butter, great a shallow 1 qt casserole dish.

2. Melt 1 tbs of butter in small skillet, add onion and garlic. Cook until tender.

3. Place the sweet potatoes, sour cream and onion/garlic mix in food processor. Process for 20 seconds or until smooth. Add parsley and pulse 4-5 times until parsely chopped.

4. Spread the potato mix into casserole dish. Melt 2 tbs butter in microwave. Add the breadcrumbs and cheese to butter. Mix well. Sprinkle over the potatoes.

5. Bake the casserole for 25-30 minutes and breadcrumbs are browned.
