Ingredients
- 3 Tbsp fish sauce
- 1 Tbsp fresh lime juice
- 1 tsp grated lime zest
- 1 Tbsp light brown sugar
- 1/8 tsp red pepper flakes
- 3/4 cup coconut milk
- 1/4 cup water
- 3 Tbsp smooth peanut butter
- 1 Tbsp plus 1 tsp peanut oil
- 1 red pepper, cut into strips
- 1 pound broccoli, cut into florets
- 2 garlic cloves, minced
- 1 tsp grated ginger
Preparation
Step 1
1. In a bowl or measuring cup, whisk together the fish sauce, lime juice, lime zest, brown sugar, red pepper flakes, coconut milk, water and peanut butter. Set aside.
2. Heat 1 Tbsp of the oil in a wok. Add the red pepper and broccoli and stir fry for about 2-3 minutes. Push the vegetables to the sides and add the garlic and ginger and stir fry for 1 minute. Add the vegetables back to the center of the wok.
3. Reduce the heat to medium low and add the sauce. Simmer for about 1 minute.
