Kielbasa Cabbage Skillet for 2

This easy, quick-to-fix recipe has long been a staple at
my house because it tastes so good.

Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 to 2 teaspoons butter
  • 1/2 pound smoked kielbasa or Polish sausage, cut into
  • 1/2-inch slices
  • 1/2 small head cabbage, coarsely chopped (about 3 cups)
  • 2 carrots, pared and slice on the diaginally thinly.
  • 1/4 cup Chicken Broth or water
  • Salt to taste, optional
  • Pepper to taste

Preparation

Step 1

In a large skillet, saute onion and green pepper in butter until crisp-tender. Add sausage; cook and stir until browned. Add the cabbage, carrots, broth, salt if desired and pepper. Cover and cook 10-12 minutes or until cabbage and carrots are tender. Yield: 2 servings.

Next Day Kielbasa-Cabbage Soup for 2

Leftovers from Kielbasa Skillet
1 can tomato soup
1 soup can water (or vegetable broth)
1/2 cup or so of beef broth
1 tablespoon hot sauce
1/2 cup long grain rice, cooked


1. Dice the kielbasa into bite-size pieces.
2. Mix all ingredients and simmer on stove till well heated.

This is even better the next day! (If the rice soaks up some of the liquid, just add a little more beef broth!)
