Nancy's New England Pork Chops

One of the first recipes I made for Jack when we were first married and still a favorite! I love it too. Great with mashed potatoes and peas.

Ingredients

  • 4-6 bone-in pork chops
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2-1 teaspoon garlic salt
  • 1/2-1 teaspoon cayenne pepper
  • 2 Tbsps margerine
  • 4 medium onions, sliced
  • 1/2 cup flour
  • 1 cup water

Preparation

Step 1

1. Mix flour and seasonings. Dip pork chops in flour and shake off excess. Set aside.

2. Fry sliced onions in margerine until golden brown. Set aside.
Add chops to pan and brown quickly. Season with salt and pepper,
garlic salt and cayenne. Add the water. (It should just cover the chops.) Simmer, tightly covered, for 45 minutes.

3. Mix 1/4 cup flour and 1/4 cup cold water and mix into pan juices to make gravy. Add a little Gravy Master if desired for color. Simmer till gravy is thickened.
