My Favorite Zucchini Pancakes

Just thinking about these makes my mouth water! DELICIOUS served with pork sausages or crisp bacon and applesauce! Jack loves these too!

Ingredients
- 2 cups grated zucchini
- 2 eggs, beaten
- 1/4 cup chopped onion
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/2-1 cup shredded very sharp cheddar cheese
- Salt to taste
Preparation
Step 1
1. In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan, cheddar and salt.
2. Heat oil (You can use nonstick cooking spray - but I say WHY would you, ha ha?) in a medium skillet over medium-high heat.
3. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side, until golden brown and cooked through. YIELD: 4 servings
