Salsa Chicken for One

MY NOTES: This is a good, easy recipe and can be double to serve two people...or three or four or more.

Ingredients

  • 1 skinless, boneless chicken breast half, pounded thin
  • 1 tablespoon taco seasoning mix
  • 1/4 cup salsa of choice
  • 1/4 cup Cheddar cheese, shredded
  • 1 tablespoon from a 4-ounce can whole green chiles, drained and thinly sliced
  • 1 Tablespoon sour cream

Preparation

Step 1

1. Preheat oven to 375 degrees.

2. Coat chicken breast on both sides with taco seasoning mix.
Place chicken in a lghtly greased baking dish. Pour salsa over chicken.

3. Bake, uncovered, for 20-30 minutes or until chicken is tender and juices run clear.

4. Sprinkle chicken evenly with the cheese and chiles and bake for an additional 3-5 minutes until cheese is melted and bubbly.

5. Top with sour cream and serve with white rice or Mexican rice.
