Ingredients

  • 1/2 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs (separated)
  • 1/2 cup butter
  • 2 tbsp lemon zest
  • 1 1/4 cup sugar
  • 6 tbsp fresh lemon juice
  • 1/2 cup milk
  • Strawberries

Step 1

Preheat oven to 350 degrees. Line 9x5 inch loaf pan with parchment.

Combine cornmeal, flour, baking soda and salt - set aside.

Beat egg whites until stiff and set aside.

Cream butter, sugar and lemon zest until fluffy and add egg yolks - mix well.
Add lemon juice and mix in dry ingredients.

Carefully fold in beaten egg whites and spoon batter into prepared pan.

Bake for 50-60 minutes or until a toothpick comes out clean.

Serve with simple syrup and strawberries.

Store in refrigerator.
