Crab Orleans Appetizers

Ingredients
- 1 stick butter
- 1 small bunch green onions- chopped
- 1/2 c. finely chopped parsley
- 2 T. instant flour
- 1 pint cream
- 1/2 lb. grated Swiss cheese
- 2 T. cooking sherry
- 1/8 t. red pepper - salt to taste
- 1 lb. crab meat - fresh or frozen

Preparation
Step 1
Melt butter in heavy pot over low heat, sauté onions, add parsley, blend in flour.
Add cream and cheese, stirring in a figure 8 direction until cheese is melted.
Add sherry, salt, pepper.
Gently fold in crab meat.
Cook 10 min.
Serve as hot dip in chafing dish w/melba rounds or in miniature patty shells.
