Ingredients
- 2 T. olive oil
- 1 small onion, diced
- 1 medium red bell pepper
- 3 cloves garlic chopped
- 1 t. salt
- ground black pepper
- 1/2 t. ground allspice
- 1/3 c. red wine vinegar
- 3 T. unsulfured molasses
- 2 T. Worestershire sauce
- 2 T. fresh lime juice
- 1/4 c. tomato sauce (no salt added
- 1 medium ripe mango, peeled, pitted and diced
- 2-3 jalepeno peppers

Step 1
Heat oil in a medium skillet over medium high heat. Add the onion and cook, stirring a few times, until translucent, about 3 minutes. Add the bell pepper, garlic, salt, black pepper and allspice and cook, stirring for 2 minutes more. Stir in the vinegar, molasses, Worcestershire, lime juice and tomatoe sauce, and cook for minute more. Transfer the mixture to a blender and add the mango and jalapenos. Blend until smooth. Put 2 c. of the barbecue sauce in a large, sealable plactic bag to marinage chicken and marinate for hou in the refrigerator. Reserve remaining sauce for serving.
