Ingredients

  • 6 slices bacon, cooked crisp, crumbled; reserve 2 T drippings
  • 1 c raw rice
  • 1/2 c chopped onion
  • 1 med garlic clove, minced
  • 1 1/2 c tomato juice
  • 1 c water
  • 1 sm green pepper, cut in strips
  • 1 t salt
  • 1/4 c cheddar cheese, shredded

Preparation

Step 1

Lightly brown rice in skillet with bacon drippings. Cook onion & garlic til tender. Add juice, water, pepper and salt. Cover & simmer 25 minutes or til done, stirring occasionally. Garnish with bacon and cheese.
