Elaine's Texas Sheet Cake

Depending on what kind of pan you are using the temps may vary. Today I used metal pans and baked at 325 and it took roughly 25 minutes. Just keep testing until toothpick in center is clean.

This is really suppose to be baked in a sheet pan but my family likes it in a 13x9x2...hahaha..pieces are more substantial. Today I used two 8x8's...one to take to Krista's and one for Richard here at home. Had to please them both.

Ingredients

  • CAKE:
  • 2 Cups Sifted Flour 1/2 Teaspoon Salt
  • 2 Cups Sugar 1 Teaspoon Baking Soda
  • 2 room temp eggs 1/2 Cup Sour Cream
  • ...............................................
  • Beat above thoroughly in mixer and in a sauce pan melt the following...
  • ...............................................
  • 2 Sticks Butter
  • 4 Tablespoons Cocoa Powder
  • 1 Cup Water

Preparation

Step 1

1. While hot add to first mixture (this batter is very, very thin so do not panic) and bake in 13x9x2 pan which has been sprayed with Flour/shortening that comes in a can or grease and flour using cocoa powder instead of flour.

2. Bake at 350 degrees until toothpick in center comes out clean...about 25-30 minutes. While this is baking do the following:

..............................................

FROSTING:

1 Stick of Butter
4 Tablespoons Cocoa Powder
6 Tablespoons Milk (3 ounces)

1. Melt this in large sauce pan and bring to a boil, reduce heat to low and add 3 Cups of sifted confectioners sugar, 1 Teaspoon Vanilla extract and 1 cup of chopped nuts.

2. Add the cups of confectioners sugar in one cup increments and use a wire whisk to stir it...continue adding the sugar and put in the vanilla extract and then the chopped nuts.

3. Pour over cake after it has cooled for only 10 minutes.
