Chicken & Shiitake Mushroom Packets

Ingredients
- 2 skinless boneless chicken cutlets cut into strips
- 1/4 c. soy sauce
- 1/4 c. dry sherry
- 2 tblsp Chinese oyster sauce
- 2 garlic cloves, minced
- 4 dried shiitake mushrooms (or fresh)
- 2 scallions, trimmed

Preparation
Step 1
In small bowl, mix soy, sherry, oyster sauce & garlic
Pour over chicken & marinate
Boil 1 c. water - pour over mushrooms & let soften 15 min.
Drain & trim stems
Make packets of 2 large sheets of foil
Divide chicken & place in center of each sheet
Top with 2 mushrooms & a scallion
Fold over & seal edges well
Cook over indirect heat on a covered grill or bake for 10 min.
Turning once
Check chicken for doneness & serve over rice
