Crispy Sweet Potato Fries

Ingredients

  • 2 sweet potatoes, trimmed and sliced to french fry size
  • 1 egg white for 2 potatoes
  • Spices to taste

Preparation

Step 1

1. Soak sliced potatoes in water for 30 mins to release starch. Rinse and pat completely dry.
2. Beat egg white until frothy. Toss potatoes with egg white and your favorite spices.
3. Place slices on a parchment-lined baking sheet - be careful not to crowd the sheet. Roast at 425, checking for doneness every 15 mins, flipping once. Reduce heat to 200 to dry potato slices for 15-20 additional minutes. Open oven door a few times during roasting to vent the steam.
