Fiesta Chicken and Rice Bake

One dish is all you need to make this cheesy chili-spiked chicken
and rice supper that's sure to become a family favorite.
Ingredients
- 1 can (10 3/4 oz.) Cream of Chicken Soup
- 1 cup Chunky Salsa OR Picante Sauce
- 1/2 cup water
- 1 cup whole kernel corn
- 3/4 cup uncooked regular long-grain white rice
- 4 boneless chicken breast halves
- Paprika
- 1/2 cup shredded Cheddar cheese
Preparation
Step 1
MIX soup, salsa, water, corn and rice in 2-qt. shallow baking dish. Top with chicken and sprinkle with paprika. Cover and at 375°F. for 45 min. or until done. Sprinkle with cheese.

I loved this! I used Tomato soup instead of Cream of Chicken soup, and it was great!!! I also crushed tortilla chips on top and it was that much better! We're definitely having this again!
Fantastic recipe, you can spice it up as much, or as little, as you like. I added a bit of garlic and cilantro and used a hot chunky salsa; I topped my servings with a bit of sour cream. I will make this recipe again and again! Would also be great with green chiles and black olives added.
Super, super easy. I used a tequilla lime salsa, added chili powder and voila! Also, it's EXCELLENT when you top it with crushed tortilla chips!

This was so easy to make and fast! Next time I make it I would double it so we had leftovers. I added a full cup of rice instead of 3/4 cup and next time I would add a full can of corn. The chicken was so moist and juicey. Even my husband loved it!
I make this using a 16 oz. jar of salsa, a can of corn, a cup of black beans and top with a mexican cheese blend. I serve it with tortilla chips and the kids can't get enough of it! They actually cheer when I tell them it's Chicken Fiesta night. It's also good reheated.
Yummy! This is a very simple recipe that I tried because I did not know what to make for dinner and had all of the ingredients. It was definitely worth it and will stay on my list of recipes to continue to cook.
This recipe is super easy and quick. You just open the cans and you're ready to go. I pair this up with cornbread muffins.
