Fresh Corn Saute with Coconut Milk

Ingredients

  • 2 teaspoons peanut or vegetable oil
  • 3/4 cup thinly sliced green onions (about 1 bunch)
  • 6 ears fresh corn, kernals removed
  • 1/2 cup light cocnut milk
  • salt to taste
  • 1 to 2 teaspoons sriacha

Preparation

Step 1

Heat oil in a large skillet over medium-high heat. Add green onions and cook 2 minutes or until softened, stirring frequently. Add corn and coconut milk; continu stirring occasionally, until most of the liquid is evaoprated, about five monutes. Stir in Siracha and salt to taste.
