Herb Chicken

Ingredients

  • 1 tblspoon olive oil
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons chopped fresh rosemary
  • 1 1/2 teaspoons salt
  • 1 teaspoons pepper
  • 2 chickens, pieces

Preparation

Step 1

1. Preheat oven to 425. In small bowl, combine oil, thyme, rosemary, s&p. Rub mixture on chicken pieces.
2. Arrange chicken, skin side up, on rack in large roasting plan (17" by 11.5")
3. Bake chicken (do not turn), until golden brown and juices run clear when thickest part of chicken is pierced with tip of knife, about 40 minutes.
4. Transfer chicken to warm large platter. Makes 8 servings
