Ingredients
- 1/4 c butter
- 2 1/4 c thinly sliced leeks (about 3 leeks)
- 2-8 oz packages sliced mushrooms
- 1/2 teas salt
- 2 T brandy (can substitute 2 T chicken broth)
- 1-2.64 oz package original country gravy mix (McCormick)
- 1 c half and half
- 1 14-oz can chicken broth
- 1/2 teas dried thyme

Preparation
Step 1
Melt butter in dutch oven over medium-high heat. Add leeks, mushrooms, and salt. Saute 4 to 5 minutes until leeks and mushrooms are tender. Add brandy and cook stirring often 2 to 3 minutes.
Stir in gravy mix and remaining ingredients and cook 3 to 4 minutes until heated thoroughly and slightly thickened.
