Cream of Mushroom & Leek Soup

Ingredients

  • 1/4 c butter
  • 2 1/4 c thinly sliced leeks (about 3 leeks)
  • 2-8 oz packages sliced mushrooms
  • 1/2 teas salt
  • 2 T brandy (can substitute 2 T chicken broth)
  • 1-2.64 oz package original country gravy mix (McCormick)
  • 1 c half and half
  • 1 14-oz can chicken broth
  • 1/2 teas dried thyme

Preparation

Step 1

Melt butter in dutch oven over medium-high heat. Add leeks, mushrooms, and salt. Saute 4 to 5 minutes until leeks and mushrooms are tender. Add brandy and cook stirring often 2 to 3 minutes.
Stir in gravy mix and remaining ingredients and cook 3 to 4 minutes until heated thoroughly and slightly thickened.
