Chicken Roll-Ups for 2

Ingredients

  • 2 slices Swiss cheese
  • 2 chicken breasts, pounded to 1/4 inch thick
  • 1 Tbsp flour
  • 1/4 tsp pepper
  • 1/2 cup chicken broth
  • 1/4 cup white wine or chicken broth
  • 1/4 tsp dried oregano

Preparation

Step 1

Cut each cheese slice in half and place 1 on top of each piece of chicken. Start with end and roll tightly. Tie with string.

On wax paper, combine flour and pepper. Mix well. Add chicken and coat.

In large skillet, melt butter or spray - add chicken and cook, turning frequently until golden - about 3 minutes. Add broth, wine, oregano to skillet. Increase heat and bring to boil. Reduce heat and simmer until chicken is cooked through and sauce is slightly thickened - about 10-12 more minutes.
