Tatsoi and Noodles

Ingredients
- 6 cups tatsoi, chopped
- 1-1/2 cup carrots, chopped
- 3 garlic, cloves minced
- 3 tablespoons olive oil (2 tbsp for sauteing garlic and 1 tbsp for stir frying.)
- onion, medium sized, diced small
- 5 tablespoons peanut butter
- 1 tablespoon white wine vinegar
- 3 tablespoons soy sauce
- 1/2 bag noodles, egg

Preparation
Step 1
Sauté oil and garlic for 5 minutes (Optional to add cut up chicken). Add carrots and onion sauté for 5 mintues. Add tatsoi and sauté till tender. In a bowl, mix together peanut butter, white wine vinegar, and soy sauce. Poor over vegetables and fry for a few minutes. Serve over egg noodles.
