- Poolish 1 cup less 1 T flour
- 1 c less 1 TB water
- 1/2 ts year
- 4 cups flour
- 1.4 t salt
- 1/2 tsp yeast
- Sauce
- 1 can san marzano
- cut ends remove seeds. Rinse each tomatoe. strain blend
- 1/4 t salt
- 1 tsp oregneo
- 1/4 t sugar
- room temp
