Gingered Carrots

Ingredients

  • 1 1⁄2 cups diagonally-cut carrots
  • 1 ⁄3 cup ginger ale
  • 1 ⁄4 tsp. ground coriander
  • 1 ⁄8 tsp. kosher salt
  • Dash of ground black pepper

Preparation

Step 1

Place carrots and ginger ale in a skillet over high heat. Bring ginger ale to a boil; cover skillet. Reduce heat to low; simmer carrots for 5 minutes.

Uncover skillet; return liquid to a boil. Add coriander, salt, and pepper. Cook mixture until liquid evaporates, about 5 minutes.
