Skillet Chicken and Dumplings for Two

Jack really liked this one and said to be sure to add it to my "Favorites" list! Be sure and make this in a non-stick pan because I forgot to and as a result the bottom burned a bit and made a mess in the pan to clean!

Ingredients

  • DUMPLINGS:
  • 1 1/2 cups milk (I used ONE cup, and I used dried milk to make the cup of milk)
  • 1 cup frozen green peas and carrots
  • 1 cup cut-up cooked chicken
  • 1 can (10 3/4 ounces) condensed cream of chicken soup
  • Dash of thyme, sage and celery salt to taste
  • ...................................
  • 1 cup Original Bisquick mix
  • 1/3 cup milk
  • Paprika, if desired
  • Chopped parsley

Preparation

Step 1

Heat 1 1/2 cups milk, the peas and carrots, chicken and soup to boiling in 3-quart saucepan, stirring frequently.

Stir Bisquick mix and 1/3 cup milk until soft dough forms. Drop dough by 8 spoonfuls intp pan. To prevent dumplings from falling apart, drop dough onto chicken or vegetables rather than directly into liquid or gravy. If dough is dropped into liquid, the simmering action may force the dough apart. Sprinkle with paprika.

Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer. Sprinkle parsley on top.
