Ingredients

  • 1/2 cup salted butter, softened
  • 1 lb box powdered sugar
  • 6 oz container frozen limeade concentrate
  • 1 tbs lime juice
  • 1 box (14 oz) vanilla wafers
  • 1 c shredded coconut

Preparation

Step 1

Prepare a cake pan by lining it with wax paper. Take out the frozen limeade and let it thaw on the counter while you start mixing the first few ingredients.

Place the softened butter in a bowl and sprinkle the powdered sugar on top and mix it up either by hand or by mixer. If the frozen limeade is thawed, add it to your mixing bowl. Add the lime juice.

Crush the vanilla wafers and add to the bowl and mix itn.

Place to coconut in a medium size bowl. You'll be coating your lime blls with it.

Use your hands to form little balls from the mixture, about 1" in diameter. After forming each ball, roll it in the bowl of coconut and place in the cake pan. Once all balls are formed, cover the cake pan with another sheet of wax paper and refrigerate 2 - 3 hours before serving. If you are not serving them for several days, place a sheet of foil over the cake pan and secure it tightly.
