Breakfast Strata

Ingredients

  • 2 whole wheat or multi-grain sandwich thins
  • 5 eggs
  • 1/2 cup low fat milk (coconut or almond milk for Paleo)
  • 1/2 t. dried thyme
  • 6 slices Canadian bacon or ham
  • 3 oz cooked chorizo
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Place 1/2 slices of bread in a single layer in an 8" square baking pan. Beat eggs, milk and thyme until blended; pour over bread. Sprinkle with ham and chorizo. Cover and refrigerate for 30 minutes.

NOTE: if not using bread, double ingredients (or use smaller cooking pan) and no need to refrigerate for 30 minutes prior to cooking.

Bake in 350 F oven for 30 minutes. Sprinkle with cheese and bake until puffed and golden brown, about 5 more minutes.
