Ingredients

  • 1

    Tbsp. olive oil

  • 4

    eggs

  • 2

    Tbsp. minced chives

  • 2

    Tbsp. water

  • tsp. salt

  • tsp. pepper

  • 2

    oz. cream cheese, cubed

  • salsa

Directions

Heat oil over medium-high heat in a large nonstick skillet. Whisk eggs, chives, water, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges). Push cooked eggs toward the center as eggs set, letting uncooked portion flow underneath. Sprinkle cream cheese on one side when the eggs are set; fold other side over filling. Slide omelet onto a plate; cut in half. Serve with salsa.
