Berry Good Calorie-Reduced Cheesecake

Ingredients

  • i envelope unflavoured gelatine
  • 1/4 cup orange juice
  • 1/4 cup milk
  • 1 egg, separated
  • 2/3 cup 1% cottage cheese
  • 2/3 cup yogurt cheese (labneh) (Line a strainer with a coffee filter; place over bowl and pour in 750ml yogurt. Refrigerate 12 hours or overnight. Makes 1 1/3 cups yogurt cheese)
  • 7 tbsp. Equal
  • grated zest of 1 orange
  • pie crust
  • 1 cup fresh strawberrries, halved

Preparation

Step 1

In 2 cup measure, sprinkle gelatine over orange juice. Microwave at high until dissolved. Stir in milk and egg yolk. Microwave at medium (50%) 30-60 seconds until hot and slightly thickened. Process cottage cheese until smooth. Stir in yogurt, 4 tbsp. Equal and zest. Add gelatine until blended. Refrigerate until consistency is like that of egg whites. In separate bowl, beat egg white until soft peaks form. Add 2 tbsp. Equal until stiff peaks form. Fold into cheese mixture. Pour into pie crust and refrigerate several hours until set. Toss strawberry halves with 1 tbsp. Equal. Arrange on cheesecake.
