Oven Pot Roast and Vegetables

My family loves pot roast. Though I usually use my dutch-oven I find it is too small to cook enough vegetables to feed my large family. So I came up with a way to use my roasting pan to keep it simple.The long cooking time left the roast fork tender. Just be sure to cut against the grain of the meat and not with it.

Ingredients

  • Place 2 1/2-3 lb chuck roast on large piece of foil.
  • Add 4 sliced potatoes and 1 lb sliced carrots.
  • Top with 1 envelope Liption Onion Soup Mix.
  • Wrap and seal tightly.
  • Place in roasting pan.
  • Bake at 350 degrees for 1 1/2 hours or until tender.

Onion Soup Mix to eliminate saltiness! Recipe below:


SUBSTITUTE FOR ONE ENVELOPE ONION SOUP MIX:


1/4 cup dried onion flakes
2 Tbsp low-sodium beef bouillon granules
1/4 tsp onion powder
1/4 tsp parsley flakes
1/8 tsp celery seed
1/8 tsp paprika
1/8 tsp pepper


Stir together. Use as a substitute for 1 envelope onion soup mix.
