Pineapple Muffins, Duesenberg Restaurant

Q: The Duesenberg restaurant in Denver serves the most delicious pineapple muffins. Can you persuade the chef to share the recipe?
Ingredients
- 1 stick unsalted butter, softened
- 1 cup plus 2 tbsps sugar
- 2 large eggs
- 3 cups all-purpose flour
- 1/2 tsp salt
- 1 tbsp double-acting baking powder
- 1/8 tsp baking soda
- 1 cup unsweetened pineapple juice
- 1 tsp vanilla
- 1/2 cup minced fresh pineapple
Preparation
Step 1
In a large bowl, cream together the butter and 1 cup of the sugar until the mixture is light and fluffy, and then beat in the eggs, one at a time. Into a bowl, sift together all but 3 tablespoons of the four, the salt, the baking powder and the baking soda. In a small bowl, toss the pineapple with the remaining 3 tablespoons flour. In another small bowl, combine the pineapple juice and the vanilla.
Stir the flour mixture into the butter mixture alternately with the juice mixture, beginning and ending with the flour mixture, and then stir in the pineapple. Spoon the batter into 18 buttered and floured 1/3 cup muffin tins. Sprinkle tops with the reamining 2 tablespoons sugar. Bake the muffins in a preheated 400 degree oven for 20 minutes or until a wooden pick inserted comes out clean.
