Apple Shortbread Pie

Ingredients
- 2 c flour
- 1/2 c white sugar
- 1/4 t salt
- 3/4 c chilled butter
- 2 egg yolks, beaten
- 1 and 1/4 lbs golden delicious apples-peeled and cut
- 1/4 c brown sugar
- 1 T flour
- 1/2 t cinnamon
- 1/2 t nutmeg

Step 1
Pre-heat oven to 400 f
Sift flour, 1/2 c sugar and salt into bowl. Cut in butter till coarse crumbs. Fold in egg yolks. Remove 1/4 of mix and set aside. Press remainder into bottom and sides of a pie pan.
In large bowl, combine apples, brown sugar, 1 T flour, cinnamon and nutmeg. Place into crust and sprinkle reserve crumbs over top.
Place pie onto cookie sheet and bake for 15 minutes. Reduce heat to 350 and continue baking 20 minutes or till golden brown and filling is bubbling.
