Ingredients

  • 4 portabello mushrooms seasoned with a little salt, paprika and pepper
  • 1 T olive oil - brush mushrooms with olive oil
  • red onion - thinly sliced
  • 1 clove garlic, finely chopped
  • 1 lg. ripe avocado, pitted, peeled, sliced thinly and dribbled with
  • lemon juice
  • 12 cherry tomatoes, sliced
  • sprig of tarragon, finely chopped
  • Juice of 1/2 lemon

Preparation

Step 1

Grill or saute mushrooms on both sidess til nicely browned
Dump contents of pan into a bowl and throwa in the avocado, tomatoes, tarragon and lemon juice.

Place mushroom cap on plates - arrange a portion of the salad mixture on top.

Serve immediately.
