Ingredients
- 4 portabello mushrooms seasoned with a little salt, paprika and pepper
- 1 T olive oil - brush mushrooms with olive oil
- red onion - thinly sliced
- 1 clove garlic, finely chopped
- 1 lg. ripe avocado, pitted, peeled, sliced thinly and dribbled with
- lemon juice
- 12 cherry tomatoes, sliced
- sprig of tarragon, finely chopped
- Juice of 1/2 lemon

Preparation
Step 1
Grill or saute mushrooms on both sidess til nicely browned
Dump contents of pan into a bowl and throwa in the avocado, tomatoes, tarragon and lemon juice.
Place mushroom cap on plates - arrange a portion of the salad mixture on top.
Serve immediately.
