Asain Chopped Salad

Ingredients

  • Dressing:
  • 1/2 C wonton wrapper, cut into strips
  • 1 C thinly sliced Chinese sausage
  • 1/4 C lemon juice
  • Zest of 1 lemon
  • 1 shallot, diced
  • 1 T Dijon mustard
  • 1/4 C olive oil
  • 1 T honey
  • Salad:
  • 1 C each chopped romaine lettuce, watercress & napa cabbage
  • 1/2 C halved cherry tomatoes
  • 1/2 C diced cucumber
  • 1/4 C sliced water chestnuts
  • 1/2 C julienned sugar snap peas
  • 1/4 C sliced scallions
  • 1/2 C crumbled feta cheese
  • 1/4 C pine nuts, toasted

Preparation

Step 1

Heat oven to 350. On large baking sheet lightly coated with cooking spray, arrange wonton wrapper strips in single layer, Coat both sides with cook spray & bake 5-10 min., shaking pan occasionally, til golden brown. Let cool on paper towels. Arrange sausage slices on same baking sheet; bake 15 min. Using slotted spoon, transfer to paper towels to drain.
Meanwhile combine all dressing ingredients. Season with salt & pepper. In large bowl, toss together all salad ingredients; pour dress over salad & toss to coat. Sprinkle with wonton strips & sausage slices.
