Red Cabbage Casserole

Ingredients

  • 8 c. shredded red cabbage
  • 1 medium onion, chopped
  • 1/4 c. sugar
  • 1 Tb. canola oil
  • 1 tsp. salt
  • 1 tsp. lemon juice
  • 2 medium tart apples, chopped
  • 1/4 c. red currant jelly

Preparation

Step 1

In a Dutch oven, combine the first six ingredients. Cover and cook over medium heat for 10-15 minutes or until the cabbage is crisp-tender, stirring occasionally. Ad apples; cook 10-15 minutes longer or until cabbage and apples are tneder. Stir in jelly until melted.
