Ingredients
- 8 slices whole wheat bread
- 1/2 cup cream cheese, softened
- 1 cucumber, peeled and sliced
- 1/2 cup alfalfa sprouts
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 4 small tomatoes, sliced
- 4 leaves Romaine lettuce
- 1/2 cup sliced pepperoncini
- Salt and pepper, to taste
- 2 ripe avocados, mashed
Preparation
Step 1
On a work surface, arrange bread slices; spread cream cheese on each. On 4 bread slices, arrange cucumber slices in a single layer; add alfalfa sprouts; sprinkle with oil and vinegar. Top with tomato slices, lettuce and pepperoncini; salt and pepper to taste. Spread mashed avocado on remaining 4 slices of bread and assemble sandwiches.
