Ingredients
- 1 cup Carrots chopped
- 1 large onion chopped
- 1 can whole kernel corn
- mushrooms chopped
- 1 can drained petit pois peas
- 2 lbs ground beef cooked
- 2 packs brown gravy mix
- instant mashed potatoes
- beef broth
- 1 cup grated sharp cheddar cheese
Preparation
Step 1
Cook meat and drain. Saute onions in butter, add carrots and cook until tender. Add mushrooms and cook until tender. Add enough beef broth to keep veggies moist while cooking.(but don't put too much broth, you don't want much liquid when you're done) When cooked add drained corn and peas. In separate pot cook 2 packs of brown gravy according to package directions.
In a large bowl, mix meat and veggies, stir in gravy. Spread on bottom of large casserole or lasagna pan. Prepare instant potatoes and spread on top of mixture.(you want at least 1" of mashed potatoes on top) Bake for 30 to 45 minutes or until heated thoroughly and bubbly around edges . Sprinkle cheese on top and bake long enough for cheese to melt nicely.
