tbs butter or margarine, melted
tbs solid vegetable shortening
Make batter to sit overnight. Combine eggs, flour, salt, milk and melted batter until smooth. Heat oven to 450 degrees. Using solid shortening, grease a 9" metal piepan or iron skillet. Place greased pan in oven for 5 minutes to heat. Pour batter into pan and bake for 30 minutes. Reduce temperature to 350 degrees and bake 5 to 10 minutes longer, until edges are puffed and golden. Remove to warm serving plates and cut into wedges.
