Granola with Dried Cranberries

Ingredients

  • 2 c rolled oats
  • 1 1/2 c slivered almonds
  • 1/4 c pumpkin seeds
  • 1/4 c sunflower seeds
  • 1 t ground ginger
  • 1 pinch salt
  • 3 1/2 T butter
  • 5-6 T honey
  • 1 t grated orange rind
  • 1/2 c dried cranberries

Preparation

Step 1

1. Heat oven to 350.
2. In a large bowl, mix oats, almonds, pumpkin and sunflower seeds, ginger and pinch of salt.
3. Melt butter with honey, then add grated orange rind. Mix together and pour over oat mixture and stir.
4. Spread mixture on a baking sheet and bake 15-20 mins until golden brown, giving it a stir every 5 mins to ensure it colors evenly. Let cool, then stir in dried cranberries.
