Banana or Zucchini Bread

This is a very moist quick bread recipe. The bread freezes well.

Ingredients

  • 1/2 cup butter, room temp
  • 2 cups firmly packed brown sugar
  • 4 medium ripe bananas, mashed (about 1 1/4 cups) or substitute 1 1/2 well drained shredded zucchini
  • 4 eggs, slightly stirred
  • 1/2 cup cooking oil
  • 1 cup yogurt (pineapple yogurt would be good)
  • 1/2 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup shredded coconut (1/2 cup per loaf)

Preparation

Step 1

• Cream butter and sugar light and fluffy
• Beat in bananas, beat in eggs one at a time
• Add oil
• Mix in all remaining ingredients (save coconut for next step)
• Divide batter between two loaf pans
• Sprinkle coconut over tops of loaves

Bake 50-60 minutes.
Let cool 5 minutes before removing from pans.

Note: substitute zucchini for the bananas
